A Chicken Dish for Two

Cheese-Crusted Chicken for Two
This crusty chicken is just right for a couple, and it bakes in the toaster oven.
1/3 cup dry bread crumbs
1/3 cup real mayonnaise
1/4 cup grated Parmesan
2 boneless, skinless chicken breast halves
Set the toaster oven for 425 degrees and line the baking pan with nonstick foil. Spray foil. Spread the bread crumbs on a paper plate. In a small bowl whisk together mayo and cheese and use this mixture to “butter” the chicken on both sides. Dip in bread crumbs, pressing gently to pick up a nice coating of crumbs. Bake 20-25 minutes or until chicken reads 170 degrees. Exact time will depend on the size of the chicken pieces.
Cook's note: for a spicier version, add a few drops of hot sauce to the mayo mixture.

Hey Janet...thanks for the great recipes through the years. Can I do this one in the regular oven at the same temp setting? I've never used a toaster oven
Thanks for the kind words, Pat. I use a toaster oven a LOT. I use it just like regular oven at the same temperatures. Watch it, of course. The electric oven in your kitchen and the convection and gas ovens in your RV could all be slightly different, Janet Groene
