Crock o’ Chicken
4 serving size pieces skinless chicken
1 cup raw rice
1 can cream of chicken soup, undiluted
1 2/3 cups boiling water
1 pound bag baby carrots
Snipped parsley (optional)
Put chicken in the bottom of a sprayed crock cooker. Sprinkle with rice and dot with dollops of soup. Add carrots and drizzle with water. Cover and cook 6 hours on Low. Place a piece of chicken on each plate, stir rice mixture and serve next to chicken. Sprinkle with snipped parsley. Serves 4.

Hmmm that sounds good. I know of some motorhome RVers that set the crock pot into the kitchen sink, and plug it in and drive with their inverter on to power the crock pot.
