A Showy Summer Salad

Janet Groene’s
Coleslaw Souffle Salad
   

 Turn a tub of deli coleslaw into your own classy,  creamy conversation piece.   Make it up to a day in advance and pull it out of the fridge with a Ta-DAH.
   Try it again with lime gelatin and a different flavor of coleslaw from the deli. Make it in individual molds or chill in a one-quart  pan and serve it in scoops or squares.


1 packet lemon gelatin dessert mix
1 cup very hot water


    Dissolve gelatin and chill until mixture is the consistency of egg white. Use a mixer or egg beater to beat gelatin to a froth  with 


1/4 cup water and 1/2 cup mayonnaise
Fold in 1 pint (2 cups tightly packed) deli coleslaw and up to
1/4 cup finely minced onion and green pepper. Chill. Serves 8.
