Coffee Cake with a Coffee Kick

Coffee Coffee Cake

    No tiresome beating nor electric mixer needed. Just use a whisk to make this super-moist, flavorful, simple coffee cake in minutes. Use instant regular or decaf coffee and, if you can’t find coffee flavored yogurt, try caramel flavor.  There’s no frosting to fuss with, so it’s easy to transport to the campground kaffee klatch or potluck.

½ cup vegetable oil such as canola
8-ounce carton coffee flavor yogurt (1 cup)
4 eggs
1 box yellow cake mix
1 cup coarse brown sugar
2 teaspoons cinnamon
1 teaspoon instant coffee (optional)

    Preheat the oven to 350 degrees. Grease a 9 X 13-inch baking pan. Whisk oil, yogurt and eggs until well mixed. Stir in cake mix until everything is evenly wet. Pour batter into the pan. Mix sugar, coffee and cinnamon and sprinkle half over the batter.
    Run a knife zig-zag through batter a few times, just enough to create streaks. Sprinkle remaining sugar mixture evenly over the surface. Bake 40 minutes or until the cake is firm and springy to the touch. Cool and cut in squares.
