Cheesecake to Die For

Cheesecake Icebox Pie
    If you have an electric hand mixer on board your RV you can make this no-bake cheesecake in just a few minutes. Then forget it in the refrigerator while it firms up. Make it different each time. Today fold in crumbled Oreo cookies. Next time add lemon zest and fresh blueberries, or make it choco-minty by folding in chopped thin mint candies.
   

2 ready-made pie crusts such as graham cracker or chocolate
2 packages of cream cheese, 8 ounces each
3/4 cup powdered sugar
1 teaspoon lemon or vanilla extract
1 pint heavy whipping cream, chilled

    Let cream cheese soften at “room” temperature or nuke it for a few seconds. (Do not  overheat.)  In a large bowl, beat cream cheese, gradually adding powdered sugar and extract. Gradually add the cream and keep beating until it’s airy and forms stiff peaks. Put in pie crusts and chill at least 5 hours.
    Garnish: sprinkle with crushed lemon hard candies, chocolate jimmies, or cookie crumbs. Or cut in slices and spoon on crushed strawberries, cherry pie filling or chocolate sauce.
