A Catfish Lover's Catfish Stew

Carolina Catfish Stew
    This simple stew stars catfish, not potatoes and other distractions. It’s quick and easy to simmer over a campfire, fire pit or RV range. Conscience requires us to add  “spoon off excess fat” to the directions but, as all southerners know, fat is where the flavor lies. Some of us don't ask, don't tell.
    There are no potatoes or other starches in this stew, so serve it with rafts of biscuits and seas of cornbread. (OK, you Yankees can serve it with chowder crackers if necessary.) 

 
8-ounce piece of salt pork, hog jowl or fatback
2 onions, diced
6-ounce can of tomato paste
6 cups water
16-ounce bottle catsup
3 to 4 pounds of cleaned, cut up catfish
Salt, pepper, hot sauce to taste

    Dice the salt pork in 1/4 inch dice and fry it out in a large kettle. Spoon off excess fat.  Gradually stir in onions, scraping up brown bits. In a bowl whisk tomato paste with some of the water and it will combine easier. Add tomato paste mixture, water and catsup. Cover and simmer until onions are tender. Bring back to a boil and stir in catfish. When fish is done, adjust seasonings and ladle into soup bowls. Serves 6 to 8.
