Turkey Dinner Pie
Easy to make, delicious to eat and a snap to serve, this is a real pie to serve in wedges. It’s an entire turkey dinner. Just add cranberry sauce and green bean casserole to the RV table and it’s Thanksgiving any day of the year. It’s good hot or cold, with leftover chicken or turkey.
It can also be made with canned chunk turkey or chicken. When you have one or two of these pies in the RV freezer it’s like having money in the bank. Freeze them cooked or uncooked. Thaw and bake or, if the pie is already baked, thaw and nuke it for a hot supper on a cold night in the campground.
1 pastry pie shell, homemade or store-bought
1 egg, beaten
2 cups prepared stuffing
2 cups cut-up cooked turkey or chicken
Optional:
Hot gravy from a can, jar or mix
Set the oven to 350 degrees. Prepare pie shell and set aside. Add hot water to the stuffing mix until it’s moist. Fold in turkey or chicken and beaten egg. Spread in the pie shell. Bake until the crust is golden and the filling set. Let stand 10 minutes, then cut in wedges. Pass the gravy. Serves 4 to 6.
