Try Salmon Fish Tacos for a Change

Sweet Salmon Fish Tacos
     Fully cooked, ready-to-heat salmon fillets are available in many forms now in the freezer section. Select a simply seasoned flavor, then provide a homemade touch with your own  fruity add-ons. I like to serve these in crisp corn taco shells but it's also tempting to use soft corn or wheat tortillas. Just grab them in tongs one at a time and wave over the fire to make them bend-able. 

4 broiled salmon fillets, thawed
4 tortillas of your choice
4 tablespoons orange marmalade
1 tub of pineapple coleslaw from the deli
Shredded iceberg lettuce
Paper-thin slices of sweet onion such as Vidalia

    Spread orange marmalade on salmon and heat in a frypan, microwave, grill, or oven. Tuck salmon into tortillas or shells and pile on coleslaw, shredded lettuce and onion rings to taste. Makes 4.
