Dumplings Complete the Meal

Butter Dumplings

    Need a quick comfort food meal for your frazzled first night out? Turn any soup, homemade or store-bought,  into a hearty meal by adding these eggy dumplings. The soup or broth should be at least 4 cups. You might start with a quart of water and four chicken bouillon cubes, a can of chunk chicken and a handful of frozen mixed vegetables. Get them boiling, add these dumplings and call it a from-scratch meal.

 
2 eggs
½ stick butter, melted
½ teaspoon salt
½ cup flour


    In a bowl, whisk eggs until light, gradually whisking in butter, then salt. Stir in flour and  drop by teaspoons into  simmering soup. Add more water or broth if needed. Cover and cook 5 minutes or until dumplings are firm.
Serves 2 to 4.
