Pork Chop Skillet
I find that canned German potato salad has plenty of extra sauce and sass to flavor the pork chops and cabbage in this one-dish winner. Use one can for normal eaters, two cans if you’ve been on the trail all day and need the extra carbs.
4 lean, meaty pork chops
Salt, pepper
Pan spray
12-ounce package grated cabbage (cole slaw mix)
1 or 2 cans German potato salad
While pork chops brown in the sprayed pan, sprinkle lightly with salt and pepper. When chops are brown on both sides, add cabbage. Flip chops so they are on top. Cover the pan and cook over medium heat until cabbage is limp. Add potato salad to heat through. Stir and serve. Serves 4.
