Piquant Pork Chops For Two
Throw this in the oven with a couple of scrubbed baking potatoes or a rice pilaf casserole and dinner is almost ready. Molasses and ketchup conspire to make a glaze that is wickedly sticky and sweet.
2 lean, meaty pork chops
Medium onion, diced
2 tablespoons molasses
2 tablespoons ketchup
Lay out a length of foil and spray it with nonstick coating. Put pork chops on it and top with onion. Drizzle with molasses and ketchup. Seal foil and bake 30 to 45 minutes at 350 degrees. (Shorter time for thin chops, longer time for thick cuts.) Uncover (careful of hot steam!) and bake another 20 minutes until chops are glazed.
