In Camping Meals, Rice is Nice

Sunshine Rice Alfredo
When you can’t stand another camping recipe made with pasta and red sauce, segue into this tasty, eye-appealing, white and yellow vegetarian supper. Cook your favorite rice or use one of the convenience versions.
Small jar marinated artichoke hearts, drained and cut up (optional)
2 medium size ripe yellow tomatoes, diced and drained
Small yellow sweet pepper, seeded and diced
15-ounce jar of Alfredo sauce
2 or 3 hard-cooked eggs
3 cups cooked rice
In a saucepan mix artichoke hearts, tomatoes, sweet pepper, Alfredo sauce and chopped eggwhites. In a small bowl, coarsely mash egg yolks.
Heat sauce mixture gently and toss with hot, cooked, drained rice. Sprinkle with crumbled egg yolk. Serves 6.
