A Rarebit Makes a Rare Bit of Camping Pleasure
Janet Groene’s
Peanut Butter Rarebit
When you need a quick, late-night supper this old-fashioned comfort food guarantees sweet dreams. We like to add a strip or two of crisp bacon.
2 eggs
1 ½ cups milk
1/3 cup plus 1 tablespoon peanut butter
Salt to taste (optional)
1/8 teaspoon cayenne pepper (optional)
4 slices toast
In a bowl whisk eggs and milk. Whisk in peanut butter. Cook over low-medium heat, stirring in a heavy saucepan or double boiler 10-12 minutes or until it forms a thick sauce. Season to taste. Spoon over toast. Serves 2 to 4.
