Butter on the Half Shell for Beach Camping

Seashell Butter
Matched sets of bivalve seashells are found in RV travels from Maine to Oregon, Baja to Florida. Save and scrub beach finds such as oyster, clam, mussel and scallop shells to use as individual butter dishes.
This herb butter is great on steak or as a spread for hearty peasant breads. Experiment with different herb mixes and soon you’ll have a signature dish that is all your own.
1 pound unsalted butter
1 tablespoon lemon juice
½ teaspoon each dried lemon peel, ground nutmeg, ground cinnamon
1 teaspoon each dried thyme, rosemary, chives, oregano and tarragon
Let butter come to “room” temperature. Mix herbs in a small bowl. Use a fork to mix herbs thoroughly into softened butter. Using a small spatula, fill clean seashells with herb butter. Chill and serve one per person. Makes 1 pound of herb butter. Shells can be thrown away or washed and re-used for years.
