Spoonbread Burgers
Stretch your meat supply by adding creamy corn to a sloppy joe-like recipe. Buy only lean ground meat to avoid the messy, risky step of pouring off excess fat--and never pour fat down the RV sink.
1 pound lean ground beef, turkey or pork
2 tablespoons canola oil
Medium onion, finely diced
1 teaspoon minced garlic
Small green bell pepper, seeded and finely diced
1 cup ketchup
15-ounce can cream-style corn
Salt, pepper to taste
6 to 8 hamburger buns
In a large skillet, fry out the meat in hot oil, gradually stirring in onion, garlic and green pepper. When meat is thoroughly cooked, stir in ketchup and corn. Bring to a boil, stirring often. Watch carefully because it burns easily. Turn off heat. Season to taste and spoon into buns.
