Breakfast Poppers
Are you an RVer who likes to hit the road early and stop later for breakfast as you hurry towards one of those first-come, first-served campsites? Bake a load of these hearty, bite-size poppers the day before, pack some fruit or juice and a hot thermos, and stop for breakfast when and where you wish.
2 1/3 cups biscuit mix (e.g. Pioneer, Jiffy, Bisquick)
2 tablespoons wheat germ
16-ounce package fully cooked sausage links or patties
1 ½ cups grated cheese such as Cheddar
A scant cup of milk
Set the oven for 400 degrees. Thaw sausage and chop it finely. Blend biscuit mix and wheat germ in a bowl, then use a fork to mix in sausage and cheese. Add only enough milk to make a stiff dough. Mix until evenly moistened but do not over-beat.
Drop by teaspoons on a greased baking sheet. Poppers should be bite size. Bake until golden, about 12 to 15 minutes. Cool and package. Makes 5 to 6 meal-size servings.
