Cheese Rhymes with RV's

Cheese Muffin Squares
    When you give muffins added muscle by adding cheese,  a simple tomato soup supper becomes a feast. Bake them in one pan to make things simpler and more compact. 


2 cups flour
1/4 cup sugar or equivalent
2 teaspoons baking powder
½ teaspoon baking soda
1 ½ cups shredded cheddar cheese
1 stick butter, melted
2 eggs
1 cup buttermilk OR
1 cup milk clabbered with 1 teaspoon vinegar
    Grease a 9 X 13-inch baking pan and set the oven for 350 degrees. Dump dry ingredients including grated cheese into a bag. Seal bag and tip gently to mix well. In a bowl, whisk melted butter, eggs and milk. Add dry ingredients and mix just until everything is evenly moistened. Do not over-beat.  Bake 15 to 18 minutes until golden brown and firm to the touch. Cool 5 minutes and cut in squares. 

Cook's note: cutting is easier if you  use a serrated knife.
