Scrumptious Cookies Raise the Bar

Orange Custard Bar Cookies
    You don’t need a mixer to make these buttery cookies. They’ll be hit at the campground kaffee klatch or just serve them to family. After the first day, refrigerate leftovers.

2 1/4 cups flour
½ teaspoon baking powder
½ cup confectioners sugar
2 sticks cold butter
1/2 cup chopped pecans
4 eggs
1 cup sugar
1 teaspoon orange extract or 2 teaspoons grated orange zest
½ cup orange juice concentrate, thawed
Confectioners sugar
    Set the oven for 350 degrees. Save out 1/4 cup flour and mix it with the baking powder. Set aside. Cut up butter and cut it into a mixture of 2 cups flour and ½ cup confectioners sugar. When mixture is crumbly, fold in chopped pecans. Press it into a sprayed 9 X 13-inch baking pan. Bake 20 minutes until light brown.
    Whisk eggs, sugar, orange extract or zest, juice concentrate and the flour-baking powder mixture. Pour into crust and bake 20-25 minutes more until filling is set and crust is toasty. Cool completely before cutting. Sprinkle lightly with confectioners sugar.
