Pasta As You Like ItLet’s make things simple. You had a long drive today, hooked up the RV, and now you need a quick, easy, one-dish meal for a famished family. This all-purpose recipe changes each time depending on the meat, type of tomatoes and herbs you add. Here’s how.
2 cups whole wheat macaroni (4 cups cooked)
2 ribs celery, diced (optional)
Small onion, diced (optional)
Half a green bell pepper, diced (optional)
5-ounce jar of Old English cheese spread
2 cans, 14.5 ounces each, flavored diced tomatoes (Italian, Mexican, etc.)
1 teaspoon dried herbs (Italian, Cajun, Tex-Mex)
10-ounce can chunk ham, chicken or turkey
Garlic croutons (optional)
While pasta cooks in boiling water, add any fresh vegetables you are using. By the time the pasta is done they’ll be crisp-tender. Drain pasta and stir in cheese spread while pasta is hot. Cover and let steam a minute or two, then stir in tomatoes and meat. Cover and heat gently. Just before serving, sprinkle on a few crunchy croutons. Makes 4-6 servings.
