Not Your Mother's Potato Salad

Sweet Swiss Potato Salad
    This unusual combination of ingredients makes a “something different” potato salad, one substantial enough to serve as a vegetarian main dish. Save time by using canned, diced potatoes. You may also substitute 4 cups diced, boiled potatoes. I've never seen shredded Swiss cheese in a package but it is easy to grate in the galley.

8-ounce brick of Swiss cheese
2 cans, 15 ounces each, diced potatoes
1 bunch scallions
Freshly ground pepper (optional)
Bottled French dressing
Lettuce cups

    Grate cheese and set aside. Drain and rinse potatoes and drain again. Put in a bowl.  Slice white and light green parts of scallions and mix with potatoes. Shower with a little freshly ground pepper if you like and folded in grated cheese. Fold in French dressing to taste. Chill thoroughly. Serve in lettuce cups. Serves 4 as a luncheon main dish or 6 to 8 as a side salad.
