Sweet Bulgar Salad
Bulgar is a grainy, pre-cooked wheat that was one of mankind’s first convenience foods.
Just add hot water and you soon have a fluffy, filling, hot or cold dish. Most bulgar salads call for mint, vegetables and other savory ingredients. This sweet version is good for a change.
½ cup bulgar
3/4 cup boiling water
1 cup seedless grapes, halved
½ cup sliced celery
½ cup coarsely chopped pecans
2 scallions, sliced
2 tablespoons raspberry vinegar
1 tablespoon olive oil
1 tablespoon maple flavor pancake syrup
Salt, pepper to taste
Put bulgar in a bowl, add boiling water, cover and let stand 30 minutes. Drain any water that hasn’t been absorbed. Fold in grapes, celery, pecans and scallions. In a small paper cup combine vinegar, oil and syrup fold into salad. Season to taste. Serves 4 as a side salad . You can also fold it into whole wheat tortillas to make burritos or add chunks of cooked chicken to turn it into a whole meal salad.
Cook’s note: you may substitute honey for pancake syrup.
