1 dozen corn tortillas
1 jar taco sauce
1 medium onion chopped
2 pounds ground beef
2 cups grated cheddar or Monterey jack cheese (or a combo of each)
1 can sliced black olives
1 can chopped jalapenos
Saute onion and ground beef until browned.
Drain liquid from the pan.
Add black olives and jalapenos until mixture is heated through.
Spray a rectangular baking pan or Dutch oven with Pam or other vegetable oil.
Take three tortillas and layer them on the bottom of the pan to cover.
Pour one-fourth of the taco sauce over the tortillas to coat.
Spread one-third of the beef mixture over the tortillas and sprinkle with one-fourth of the cheese.
Continue layering in the same manner with a final layer of cheese on top.
Place in a 350 degree oven or heat in covered Dutch oven for 30 minutes.
Slice and serve with refried beans and a salad.
This is another dish that is tasty reheated the following day.
