Something to Stew About

Cassoulet with Dumplings 

    One big pot is all you need for this hearty hobo meal. Make it over the campfire, camp stove or on the range in the RV. 

All it takes to feed a crowd is to add more of each ingredient.

1 1/2 pounds bite size pieces of stew beef, pork or chicken

2 tablespoons vegetable oil

1 teaspoon minced garlic

Large onion, diced

3 ribs celery, chopped

1 carrot, chopped 

4 cups water

4 chicken or beef bouillon cubes

2 teaspoons mixed Italian seasoning

1 can each diced tomatoes and kidney beans

 2 cups biscuit mix

1/2 teaspoon dried thyme

Milk or water 

    Brown meat in hot oil, gradually adding garlic and vegetables. Add water and bring to a boil to dissolve bouillon. Cover and simmer until meat is tender.  Add seasoning, tomatoes and beans. 

    Add water or milk to biscuit mix and thyme to make a thick dough. Drop by tablespoons on boiling cassoulet. Cook 10 minutes uncovered, then 10 minutes tightly covered. Serve at once. As written it serves 6.
