For an RV Breakfast, Rice is Nice

Tired of the same old eggs and bacon, toast and coffee? Make this breakfast wild with hot sausage or mild with a maple sausage. Then pass the hot sauce at the table for those who want more kick. It's easy to increase the rice measure to raise the carbs or stretch the portions to feed more folks. 

Ready-to-serve rice in a packet is a good choice for this easy, offbeat breakfast dish. It calls for a cooked, but fairly dry, long grain rice. Make it in one big skillet outdoors over the campfire or indoors on any RV range. Then let the good times roll!
   
2 cups (or more to taste) cooked rice, preferably one day old
1 pound your favorite breakfast sausage

½ cup diced red, green and/or yellow sweet peppers
½ cup diced green onions
2 firm, fresh tomatoes, diced
1 teaspoon minced garlic
½ cup minced cilantro
1 teaspoon curry powder

6 to 8 eggs
½ cup chopped parsley
1/2 cup finely chopped pecans


    Fry out sausage in a large skillet, breaking it up. Spoon off any excess fat, but do leave some for flavor. Gradually stir in rice, vegetables and seasonings  breaking up rice as you stir. Whisk eggs and pour into skillet.  over rice and sausage.  

    Now cover and  cook until eggs set or keep stirring until they set. When eggs are cooked, remove the breakfast to plates and sprinkle with parsley and pecans. Serves 6.
