A Main Dish to make Meaty, Vegetarian or Vegan

    Shortcuts such as instant rice and broth in a carton make this colorful  Italian classic a snap for RV travel. One advantage to instant rice in a small RV with only one to three burners is that it cooks off the burner, freeing up the stove for cooking other courses.
     When you use vegetable broth and  substitute 4 chopped, hard-boiled eggs for the meat, it’s a vegetarian main dish.   Easily substitute all plant-based foods for the meat, butter and cheese and it’s vegan, still offering the comfort food combination of rice and bright green English peas.

1 or 2 cans chunk ham, drained
1 tablespoon butter
1 tablespoon vegetable oil
Medium onion, diced fine
4 cups chicken broth
2 cups green peas, thawed
4 cups instant rice
½ cup grated Parmesan cheese
Salt, pepper
   
    In a saucepan, sizzle ham in hot butter and oil, breaking it up while gradually adding onion. When onion is soft, add broth and bring to a boil. Stir in peas, quickly bring back to a boil and immediately stir in  rice. Turn off heat. Cover pan and set aside for 7-10 minutes until rice is tender. 


    Fold in Parmesan, or pass it at the table. Since broth, ham and cheese are already sated, do not add salt. Pass salt shaker and  pepper grinder at the table. Serves 4.
