Not Just Another Impossible Pie

Impossible Taco Pie
     Dozens of these “impossible” pie recipes have been around for a while. This one may be new to you. It makes a whole meal including salad because it’s served with heaps of shredded lettuce, sliced scallions and diced fresh tomatoes.

1 pound ground beef, pork or turkey
1 tablespoon vegetable oil
Small onion, diced
1 packet taco seasoning mix
Small can diced chilies, drained
1 can Rotel tomatoes (medium, mild or hot), drained

3 eggs
1 1/4 cups milk
3/4 cup biscuit mix
½ cup grated cheese

Optional Toppings: (use any or all)
Sliced scallions
Minced cilantro
Grated cheese
Sour Cream
Shredded lettuce

    While meat fries out in hot oil with the onion, whisk eggs, milk and biscuit mix. Fold in grated cheese.  Stir chilies, taco seasoning and Rotel into cooked meat.
    Grease a deep 10-inch pie plate. Put meat mixture in the pie pan. whisk eggs, milk and biscuit mix. Fold in grated cheese. Pour over meat. Bake 35-45 minutes at 400 degrees or until it’s firm and browned on the edges. Let stand 5 to 10 minutes and cut in wedges. Add toppings of your choice.  Serves 6.
