A Sauce for All Seasons

    One easy way to add a WOW factor to a  simple RV meal is to have one or more sauces on hand. They punch up flavor and appearance, liven canned vegetables and cover  little slips such as the fish fillet that fell apart or the breaded chicken that left part of its crust in the pan.
    Make a big batch of this sauce to serve over hot or cold seafood, hot vegetables, poached chicken, omelets, grilled ham, burgers and much more. It keeps up to a week in the fridge. The recipe is easily doubled. 


16-ounce jar of mayonnaise (2 cups)
Hefty squirt of ketchup (about 1/3 cup)
1/4 cup honey
1 teaspoon each onion powder, dried tarragon
5 to 6 drops of Tabasco sauce
1 teaspoon curry powder

1 teaspoon fresh lemon zest (optional)

    Whisk mayonnaise, ketchup and honey. Stir in remaining ingredients and chill several hours  for flavors to blend.  Makes 2 1/2 cups.
